Baingan Bharta

Baingan ka bharta is a a spiced Indian eggplant/aubergine mash that I make VERY often. It’s super quick and tastes delicious. It’s smokey, spicy and is probably my favourite way to consume eggplants. You can pair it with rice or roti, some dal on the side you got yourself a well balanced meal right there!

Recipe:
Serves: 3-4

– 2 medium aubergine/eggplant
– 2 tsp Ginger and garlic paste (or 2 minced garlic cloves and 1 small knob of ginger, minced)
– 2 green chili peppers
– 1/2 large red onion
– 2 tomatoes
– Red chili powder
– Garam Masala
– Salt
– Chopped coriander/Cilantro
