Gluten Free Healthy White Chili with Chicken Recipe

This Gluten Free Healthy White Chili with Chicken recipe is filling and delicious, and ready in about an hour! It has a wonderful, smokey aroma from smoked chili with a savory, spicy taste from cumin and oregano. Kale cabbage adds extra texture into the chili, and you can substitute another hardy green cabbage.

If you enjoy a spicier chili, add more red pepper flakes.

Serve with shredded cheese on top (or vegan and non dairy shredded cheese!)

Healthy White Chili Recipe Ingredients

2-3 Onions
3-4 Garlic Cloves
1 Tbsp Cumin
1 Tbsp Oregano
2 tsp Chili Powder
2¼ lb (1 kg) Ground Chicken
2 Cans of White Beans (Cannellini Beams)
3 Tbsp Gluten Free All Purpose Flour
1½ Cups Frozen Corn
¼ tsp Red Pepper Flakes (if you enjoy a spicier chili, add more. This amount results in a little bit of a taste, but not super spicy).
1 Bunch of Kale (You can substitute Swiss Chard as well)
Salt and Pepper to taste

Instructions for Gluten Free White Chili Recipe

1. Sauté onion and garlic, season with salt and pepper.
2. Add oregano, cumin, and chili powder.
3. Add the protein and continue to sauté to cook the chicken.
4. Mix in 3 Tbsp gluten free all purpose flour to thicken the chili.
5. Add 2 cans of white beans (Cannellini Beans).
6. Add 1½ Cups Frozen Corn and mix well.
7. Add red pepper flakes.
8. Add kale and mix everything well.
9. Add 4 Cups of boiling water or chicken stock.
10. Season with salt and pepper.
11. Cook over medium heat for about 50 minutes, stir occasionally.
