Hot Chili Oil Biang Biang Pasta

1. Making Braised Pork Topping (Could substitute it with any soy sauce-y topping or Tomato Fried Egg)
– Cut Pork Belly or Pork Shoulder and mushroom into bite-sized pieces.
– Add pork to the pan over medium heat. Cook until the pork is browned. Absorb excessive oil with paper towel.
– Add mushroom and fry it with remaining pork fat.
– Add 1 tbsp dark soy sauce, 1 tbsp soy bean paste, 1 tsp sugar and water. Braise for around 25 min until the sauce is significantly reduced.

1. Prepare Vegetable Toppings (Bok Choy and Soy Bean Sprouts preferred, could be replaced with any crunchy vege)
– Add bok choy to boiled water. Boil it for around 2-3 min.
– Add soy bean sprouts to boiled water. Boil it for around 4 min.

1. Make Lasagna Biang Biang Noodles
– Add Lasagna sheets to boil water separately. Add a little oil to the water to prevent them sticking together. Boil for around 12 mins.
– Rinse lasagna with iced water.
– Cut lasagna sheets into 1 inch wide stripes.

1. Assemble Hot Chili Oil Biang Biang Pasta (Portion for 1)
– Add lasagna stripes, vegetables and braised pork to a bowl.
– Add 1/2 tbsp balsamic vinegar, 1 tbsp light soy sauce, chopped green onion, chopped garlic, 1 tbsp chili flakes, a pinch of salt to the pasta. Pour super hot oil to these seasonings.
– Mix everything together.
