Chili Bruschetta, italian recipe, fast and delicious

3 tbs avocado oil
1 small yellow onion
2 garlic cloves, minced
1 chipotle pepper with a bit of its own sauce
1 TBS chili seasoning
1 lb grass fed beef, ground
TT Sea salt and black pepper
TT Parmigiano cheese, grated
2 tbs tomato paste
TT Extra virgin olive oil
2 TBS chives, freshly chopped
Crusty sourdough bread, cut thick and toasted [I used mine, wholegrain]
Saute a little onion with avocado oil, add garlic, cook a minute then add chipotle and chili powder, let bloom a minute over medium heat, then stir in beef, crumble and brown thoroughly. Season with salt and pepper, add tomato paste and 1 quart boiling water, cover and simmer for 1 hour. Uncover and let evaporate the residual liquid left. Toast or grill slices of bread [even better taste if drizzled with olive oil] and top with plenty of chili, grated Parmigiano cheese, chives and a quick drizzle of extra virgin olive oil #chili #bruschetta #beef #fusionfood #sourdough #bread
