I decided to show you (steal) my dad’s delicious, vegan chili recipe. Easy to make, packed with protein, iron and fiber. Pair it with veggie crudite or garlic bread š
Ingredients:
1-2 onions diced
3-4 garlic cloves minced
2-3 jalapenos, seeded and chopped
2-3 tblsps olive oil
3 tblspns chili powder
1 tblspn ground cumin
1 tblspn oregano
2 tspn salt
2 tspn achiote/annato powder
1-2 tsp chipotle powder
1 small can tomato puree/paste
1 large can diced tomatoes
4 large cans of beans (whichever you like, I bought them in bulk instead of cans so I had to soak them overnight)
1 cup red or brown lentils (dry)
3 cups veggie broth/stock
1 cup medium salsa (tomato or bean/corn)
Optional garnish of pickled jalapeno slices
