Chilli con carne is a simple, no fuss one pot dish that I make using my Magic Cooker. For anyone that has never heard of Magic Cooker, it is a thermal cooker which uses a minimal cooking time on the stove, then uses the residual heat trapped inside the pot to cook the meat, which normally requires a longer cooking time. It is similar to a pressure cooker except it does not use any electricity and the food is still piping hot after 4-5 hours.
I like to use a combination of dried mexican ancho and chipotle chillies to get that smoky flavour and fresh chillies together with ground chilli powder to give it a fiery kick. This dish requires no effort at all and can also be make a day in advance so it tastes even better the next day.
Ingredients:
2 medium red onions, blended
3 garlic cloves, blended
Mix of dried ancho and chipotle chillies, rehydrated and blended
3 fresh red chillies, blended
450g lean steak mince
1 heaped tsp cumin powder
2-3 tsps chilli powder
2″ long cinnamon stick
1 x 400g tin of plum/chopped tomatoes
2 x 400g tins of red kidney beans, rinsed and drained
200mls beef stock
Salt, season to taste
Oil for cooking
