A_Food_Dude:

Everyone loves fruit. Right? What if I tell you that your fruit is boring but I can show you how to spice up your fruit life! The magic of compression. Compressing is a fun and simple way to add another dimension to your fruit – changing both the texture and flavor for the better. And if you do it with your favorite liquid, the fruit will absorb the liquid creating a whole new flavor profile. An infused simple syrup can turn your boring fruit into a super star. Light herbs like mint, basil or lavender add a subtle hint. Fresh ginger and vanilla add a bit more flavor. Even alcohol can add excitement. But you shouldn’t forget using a spicy chili pepper to infuse flavor. The heat from the chili pairs well with the sweetness of the fruit, leaving a flavor explosion on your tongue.

In this recipe, I took half the watermelon, cutting it into cubes and blending it until fully mixed. I then strained it to remove anything unnecessary and added 2 chopped Thai bird chilis. You can add more (or any other pepper) if you like it really spicy. I let that sit for 24 hours to let the liquid infuse. The next day I cut the remainder of the water melon into cubes, placed them in bag with some of the chili infused liquid and compressed it using my @avidarmor vacuum chamber sealer. After that, I made a salad with feta and mint. This was so good I can’t wait to try other ways to add sweet heat.
