Garlic Chili Noodles! How To Cook Noodles Chinese Ways. Easy Noodle Recipe With Chickpeas

Ingredients材料 :
3 g salt鹽
120 g dry shaved noodle 乾刀削麵
5 g sesame oil 香油
30 g Chinese celery, minced 中芹切末
30 g spring onion, minced 蔥切末
25 g garlic, minced 大蒜切末
5 g ginger, minced 生薑切末
45 g grape seed oil 葡萄籽油
120 g cooked canned chickpeas 煮熟罐裝鷹嘴豆
10 g hot chili flakes 辣的辣椒碎

Note: the water is 2.5 litre in the pot and 3 g salt added while cooking the dry noodles; it gives a bit of flavour to the noodles. If skip the salt then you may need to add bit more soy sauce or bit of salt when frying the noodles.
說明:
鍋裡的水是2.5升, 煮乾麵時加了3克鹽, 它給麵條加了點味道.如果不放鹽, 炒麵時可能需要多加點醬油或少許鹽.

Seasoning Sauce 調味醬汁:
25 g soy paste or mushroom paste 醬油膏或香菇醬
160g water 水或高湯
20 g soy sauce 醬油
3 g raw sugar 黃糖
15 g dark soy sauce 老抽
5 g sesame oil 香油

Note: choose and use good quality of soy sauce to make this simple noodle dish. The different made of sauces may not deliver the same result as video shown. Alternatively, may need to add bit more flavouring agent e.g. mushroom powder, msg or other flavoured soy sauce.
