▣ INGREDIENTS: ▣
► Olive oil
► Red Onion, chopped
► Pepper (Red, Green, Yellow, or Orange – Does not matter), chopped
► Baby Carrots, chopped
► Celery, chopped
► Sea Salt, *as needed*
► Minced Garlic
► Chili Powder, approx. 2 tablespoons
► Ground Cumin, approx. 2 teaspoons
► Smoked Paprika, approx. 1 teaspoon
► Dried Oregano, approx. 1 teaspoon
► Diced Tomatoes, 2 cans with their juices
► Black Beans, 2 cans, drain & rinse.
► Pinto Beans, 1 can, drain & rinse
► Vegetable Broth, 2 cups
►Bay Leaf, 1
►Sherry Vinegar, 1/2 teaspoon
►Tortilla Chips
Additional items you can add:
► Sour Cream
► Grated Cheddar Cheese
► Sliced Avocado
► Corn
►►►INSTRUCTIONS:
1. Warm olive oil in pot over medium heat. Add chopped onion, bell pepper, baby carrot, celery & salt (personal preference; add what you need but remember less is sometimes better 🙂 Cook for about 7 – 10 minutes
2. Add garlic, chili powder, ground cumin, smoked paprika and oregano. Cook for about 1 minute, you will smell it (DO NOT LET IT BURN)
3. Add diced tomatoes, drained black and pinto beans, vegetable broth and bay leaf. Reduce heat to avoid burning; simmer for 30 minutes. Stirring occasionally.
4. Take 2 cups of chili and blend until smooth (BE CAREFUL IT WILL BE HOT), then pour back into the pot and blend.
5. Add Salt (if needed) and Sherry Vinegar
6. Serve with tortilla chips
