Hi there, my name is Natasha and in this video I share some simple meals that I prepped for my family this past week! If you watched my previous video you would know that I am currently back on my weight loss journey!

Here are the ingredients I used for each recipe (please watch video for directions):
1.) BLACK PEPPER TOFU, CHINESE BROCCOLI, & BROWN RICE
Ingredients used:
– 2 cups short- grain brown rice + 4 cups water + pinch of salt
– 2 regular packets (15.5oz) Extra Firm Tofu (drained, patted dry, cubed)
– 3-4 garlic cloves, minced
– 1-2oz fresh ginger, minced
– 1 large shallot, diced
– 1 birds eye chili *sub for other dry red chili, finely minced
– 4-5 scallions, chopped
– 2 celery stalks, sliced
– 12 oz Chinese broccoli, loosely chopped *sub: broccoli + sprinkle of salt
– 1-2 Tbsp. Black Pepper for TOFU (to your liking)
Sauce:
– 4-5 Tbsp Tamari
– 3 Tbsp Brown Sugar *sub for coconut sugar, or other alternative of your choosing
Note: also calls for 2 Tbsp. vegan butter, but I omitted this in the video
2.) CHICKPEA COCONUT CURRY
Ingredients used:
– 3-4 cups Cooked Chickpeas *sub for canned (drain + rinse)
Note: I SOAKED my chickpeas overnight(about 3-4 cups dry), then cooked in the Instantpot for 14 min on high pressure, and let it naturally release. I used only half for this recipe
– 2 cups short grain brown rice + 4 cups water +pinch of salt (cooked in IP for 21 min HP)
– 1 cup red onion, diced
– 4-5 garlic cloves, minced
– 1 red bell pepper, diced
– about 4-5 cups broccoli, chopped
– 3-4 cups cooked chickpeas
– 2 cans coconut milk
– 2 tsp. cornstarch + water (slurry)
– 2-4 Tbsp. Red Curry Paste
salt + pepper to taste
Note: I recommend using a Thai chili hot sauce or even some chili garlic sauce for a kick 😉
3.) MEZZE BOWLS with Marinated White Beans & RED PEPPER PESTO
Ingredients used:
– 1 cup Quinoa + 2 cups water + pinch of salt (cook more if you’d like)
– 12 oz (about 2 cups) Green Beans, ends trimmed + salt to taste
White Bean Salad:
– 2 cans (about 26 oz) Cannellini beans, drained/rinsed
– 2-3 tsp. fresh dill, chopped
– 2-3 scallions, sliced
– 2-3 tbsp lemon juice (about 1/2 a lemon is fine)
– 1 Tbsp. Olive Oil (optional) *recipe calls for 2 tbsp.
– season with salt + pepper
MIX TO COMBINE
RED PEPPER PESTO:
– 8 oz cans roasted red bell pepper, drained
– 3 garlic cloves
– 2/3 cup sliced almonds
season with salt + pepper
BLEND WITH A DASH OF WATER
* recipe calls for 2 tbsp. olive oil, I omitted it in the video.
FOR THE BOWL (toppings)
– 4 oz Arugula + lemon juice +salt
– sliced kalamata olives
– nutritional yeast
4.) WHITE BEAN CHILI
Ingredients used:
– about 2 cups RAW Cashews, soaked in hot water for 5-10 min
Note: drain water, then blend with about 1.5 cups water
Reserve this cashew cream for later
– 1 cup white onion, diced
– 1 small jalapeño, finely minced
– 1/2 poblano pepper, finely minced
NOTE: feel free to add MORE if you want 😉
– 4-5 garlic cloves, minced
– 2-3 cans Great Northern Beans *I only had 2, but I recommend adding a 3rd can
– 1 tsp. cayenne pepper
– 2 tsp. cumin
– 1 tsp. smoked paprika (added 1/2 tsp at first, then added more later when I tasted tested)
– 1 Tbsp. Oregano
– 1-2 tsp. Chipotles in Adobo Sauce
– 2 tsp. cornstarch + water slurry
– about 4 cups water
– about 2 cups cashew cream (prepped earlier)
– 1-2 cups frozen corn
COOK UNTIL it thickens up, salt + pepper to taste
TOPPINGS:
Cubed Avocado, Fresh Cilantro, and highly recommend the pico de gallo seasoning ! so yummy :p
