Braised been short ribs
Yields 5 servings
2 to 3 lbs of beef short ribs washed in cold water with lemon  rinse and pat dry.

Season the beef with
1 Tbsp Grapeseed Oil
5 large cloves of minced garlic
1 Tbsp of good quality all purpose seasoning (of your choice)
1 packet of sazon
1 tsp of fresh cracked black pepper
½ tsp of peppercorns (optional)
1 ½ Tbsp of better than bouillon BEEF base
The juice of 1 large lemon
1 Tbsp of liquid smoke
1 Tbsp onion powder
3 scallion springs roughly chopped

Season meat and marinate for a minimum of 4 hours and let sit and come to room temperature for 30 minutes before cooking.

Cooking ingredients and amounts. (I used a cast iron skillet on medium high heat and seared the beef 2 to 3 minutes per side) follow  cooking instructions in the video.
1 ½ Tbsp  avocado oil
2 Tbsp of butter
½ cup high quality red wine
1 ½ cup of water. (Add it to the bowl you marinated the beef in and get all the flavoring of the marinade.)
Let it come to temperature before adding your beef in and all of the rendered flavors. Taste for salt and adjust to your liking)

Top with ½ cup of each.
Green bell pepper
Red bell pepper
Yellow or red onion

Cover your beef and place into a preheated 375F oven  for 30 minutes.

Cauliflower mash
Yields 5 servings
1 large head of streamed cauliflower
4 Tbsp of butter (unsalted)
4 large cloves garlic minced
¼cup  finely diced onions
½ Tsp chicken bouillon
½ garlic salt
Fresh cracked black pepper to taste
¼ tsp oregano or herbs de Provence
½ cup  heavy cream
¼ cup shredded Gouda cheese
¼ cup aged whiter cheddar

Lower carb-ish chilli
YIELDS 10 SERVINGS
1.5 lbs lean ground beef (90/10)
1 lbs ground spicy Italian Sausage (chicken or beef)
12 oz crushed tomato sauce
1 can dark red kidney beans (drained)
1 can black beans (drained)
1 can great northern beans(drained)
(IF YOU ARE KETO REPLACE USING BEANS WITH ABOUT 6 OZ OF EACH ZUCCHINI,  YELLOW SQUASH, MUSHROOM.  ADD THE ZUCCHINI AND YELLOW SQUASH LAST 8 MINUTES OF COOKING TIME)
5-6 large cloves of garlic minced
3 stalks of celery finely diced (really small damn near minced)
2 large sticks carrots finely diced
3 springs scallions finely diced
½ bell pepper finely diced
2 fresh bay leaves
3-4 sprigs of thyme and rosemary
1 Tbsp olive oil
8 oz of no salt beef bone broth or beef stock
2 Tbsp swerve brown sugar sweetener or golden monk fruit sweetener
1 cube of beef bouillon or 1 Tbsp of better than bouillon BEEF base
10 0z cup  hot water
2 Tbsp Worcestershire sauce
3 to 4 Tbsp of chili powder
1 tsp smoked paprika
1 Tbsp onion powder
1 Tbsp complete seasoning
½ tsp cayenne pepper
Fresh cracked black pepper to taste
Sea salt to taste but only add it after the chilli has cooked down. (Flavor develops while cooking. I’d say wait until the 2 hour cooking mark to taste for salt and adjust)
½ of a large onion diced (I made mine a little larger but the choice is yours)

Step 1. Sweat your holy trinity veggies + garlic  in 1 tbsp of olive oil . Once they become soft and translucent should take about 6 to 7 minutes
Add your ground beef and ground pork and cook it until it’s no longer pink.

Step 2. Add all the  liquids then remaining ingredients and seasoning and cook on low and slow for 3.5 to 4 hrs. You know it’s done when it reduces and thickens.
