2022 FALL – EASY Weeknight Meals – Homemade CHILI RECIPE

Hi! Come cook with me for this cozy warm fall meal consisting of an easy homemade chili recipe that can be made during the week. My family and I love having this as leftovers throughout the week and I imagine could work really well incorporated into a secondary dish for a (chili) mac and cheese casserole or as a base for shepherd’s pie.

Chili:
2 packages ground Turkey
2 cans kidney beans (I use organic)
Two garlic cloves
1 large red onion
1 red pepper
1 green pepper
2 tablespoons chili powder
1 tablespoon paprika
1/2 tablespoon cumin
1 tsp of cayenne pepper
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 can or 28 oz crushed tomatoes
S&P
About 4 cups of water (give or take)
1/2 cup of red wine (Cabernet usually but pino noir works okay as well)

Add ons:
Rye bread
Tortilla chips
1 stick of Room temperature unsalted Butter
Flakey sea salt (I use smoked sea salt)
Shredded Cheese
Sour cream

Heat a deep sauce pan to medium and add in olive oil with your ground Turkey to brown

Once browned, add whole garlic cloves and sauté for about 2 minutes making sure it gets golden brown before adding in your onions and peppers

Season with salt and pepper

Once translucent and soft (usually around 8 minutes) add in spices with tomato paste and cook off for about 2 minutes until a rich red color

Add in wine and scrap bottom of pan to deglaze

Take out your whole cloves of garlic and set aside

Add in crushed red tomatoes and let it cook for a few minutes until heated through

Once at a simmer, lower heat to medium low, and start adding in water (I usually start with 1 cup and eye ball it and add more as it cooks down)

Cook for about a half hour (the longer the better as the flavors will marry together) and keep adding water as needed while stirring often

At the last 15 minutes add your can of red kidney beans

For garlic butter:
Take garlic cloves used to flavor the chili and mash up with the back of a spoon to form a paste
Add that to softened butter in a bowl and mix together
Add a pinch of flakey sea salt and combine (adjusting as needed)

Use on Rye bread and enjoy! 🤍
