Making lunch for my roommate (ep.3)

Cucumbers – super similar sauce to my spicy cold tofu recipe but I made it more gingery
– 1 large cucumber
– 2 green onions
– 1/2 inch ginger
– 1 tbsp chili oil (+/-)
– 2 tbsp soy sauce
– 1/2 tsp toasted sesame oil
– 1 tbsp honey / maple syrup / brown sugar
– 1 tbsp rice vinegar

Sabudana Khichdi (you’ll know the sabudana are cooked when they start turning a bit transparent):
– 1 cup sabudana (sago or tapioca pearls), rinsed and then soaked with 1 cup water overnight
– 1/2 tsp cumin seeds
– 1 sprig kadi patta (curry leaves or sweet neem leaves)
– 1 inch ginger, grated
– 3 green chilies, finely chopped (+/-)
– Dried red chili (optional)
– Diced potatoes / frozen veggies / whatever you want!
– 1/2 tsp sumac
– 1/2 tsp amchur (mango powder)
– 1/4 tsp black pepper
– Salt to taste
– 1/2 cup roasted peanuts
– Handful of chopped cilantro
