High protein vegan chilli – Save this reel for the most easy recipe. #poojnessdoescooking
Recipe:
1. Add a little olive oil in the pot. In goes, a couple of chopped garlic.
2. Then add a can of chopped tomatoes and a can of red kidney beans (drain and rinse first). Then add a good amount of soya mince (I’ve used frozen here).
3. Next add salt, pepper and oregano. Afterwards, add cumin powder, paprika or chilli powder and chilli flakes.
4. Once cooked for about ten minutes, add a lot of spinach leaves because you know they’ll become tiny anyway.
5. Let it cook for another five to ten min. Check the salt and spice levels and adjust as needed.
6. Serve it with quinoa and avocado slices. You can also add some pickled jalapenos to the plate if you like.
