1 Large Yellow onion, chopped
3 Large Garlic cloves, minced
1 Medium Red bell pepper, chopped
1 Pound Extra-lean ground turkey or chicken (99%)
2 tbsp. Dark or regular chili powder
2 tsp. Ground cumin
1 tsp. Dried oregano
1/4 tsp. Cayenne pepper
1 tsp. Approx. salt, plus more to taste
1/4 Pack Baking soda
1 Can Diced tomatoes or crushed tomatoes
1 1/4 cup Chicken broth
2 Cans Dark red kidney beans, rinsed and drained
1 Can Sweet corn, rinsed and drained
2 tbsp. Shopped cilantro
For topping:
Shredded cheese to taste, Avocado, Tortilla chips, Cilantro, Sour cream
