If you’re in the mood for something unique and delicious, then these Sausage and Gravy Breakfast Enchiladas are just what you need. Featuring soft, fluffy enchiladas wrapped in a delicious sausage and gravy mixture, these enchiladas are sure to satisfy your appetite!

0:36 Pre-heat oven to 350 F
0:41 Start cooking sausage
1:00 Butter your dish
1:20 add onion and JalapeƱos
1:51 remove 1 cup of sausage to use later
2:10 add your eggs t bowl
2:15 add your flour
2:38 add your level up seasoning! (link down below)
3:05 add your milk
3:40 add some A seasoning (or whatever you have available)
4:12 partially cooking down eggs
5:16 add eggs and 1 cup of sausage to tater tots
5:23 add half the cheese to bowl
5:44 mix ingredients in bowl
6:03 add thin layer of gravy to bottom of dish
6:30 build your breakfast enchiladas and fill up dish
7:35 add gravy on top of enchiladas
8:13 add rest of cheese on top of gravy
8:44 put dish into oven and cook for 30-40 mins
9:40 taste test!

1 lb. ground Breakfast Sausage
1/2 cup diced Onion
1 Jalapeno, minced
1/3 cup All-Purpose Flour
2 3/4 cups Milk
1/4 tsp. Salt
1/4 tsp. Pepper
10 large Eggs
2 tbsp. Butter
2 cups cooked Tater Tots
1 cup shredded Pepper Jack cheese
1 cup shredded Cheddar Cheese
10 – 12 fajita-size Flour Tortillas
