EASY One Pot Plant Based Chili 🌶️
Fall camping is here which means it’s time to cook my favorite easy camping meal – One Pot Plant Based Chili with @beyondmeat. Reasons why I love this meal 👇🏽

▫️It’s packed with 18g plant-based protein per 100g serving (a must for growing kids)
Now let’s get cooking!
I N G R E D I E N T S
1 package Beyond Beef
1/2 diced white onion
3 chopped gloves garlic
1/2 jalapeno seeded and diced (or leave seeds in if you love spice 🌶️)
2 tbsp chili powder (or to taste)
1 tsp cumin
1 green bell pepper diced
1 large can diced tomatoes with juice (to desired thickness)
1 large can of tomato sauce
1 can of kidney beans
1 can of brown beans
Salt & pepper to taste
I N S T R U C T I O N S
1. In a large pot, brown onion, garlic and jalapeno. Add Beyond Beef and spices. Cook for 5-7 minutes breaking up to desired crumble size.
2. Add remaining ingredients and bring to a boil. Reduce heat and simmer uncovered for 30 mins or until desired thickness.
3. Top with vegan sour cream, vegan cheddar cheese, sliced avocado, and remaining jalapeno.
Pro-tip: Save the leftovers and use them as dip with your favorite tortilla chips!
