Lazy Lasagna Chili | Homemade Lasagna Recipe with kim sasser hill

Ingredients:

• 1 cup finely chopped zucchini
• 1/2 cup finely chopped onion
• 1 l b. sweet Italian link sausage
• 2 garlic cloves, pressed
• 1jar (26 oz.) spaghetti sauce
OR substitute with fire roasted tomatoes
• 2 cans (14.5 oz.) beef broth
• 1 cup water
• 1 1/2 cups uncooked pasta nuggets

Directions:

1. Coarsely chop zucchini and onion using Food Chopper. Set zucchini aside.
Remove casings from sausage, discard casings. Cook sausage, onion, and
garlic i n 4 qt. pot over medium heat 8-10 minutes or until sausage is no
longer pink, breaking into crumbles; drain.
2. Add spaghetti sauce, broth, and water, bring to a boil. Stir i n pasta.
Reduce heat , simmer, uncovered, 7 minutes. Stir zucchini into chili and
cook 5-7 minutes or until zucchini is tender. Remove from heat, stir basil
into soup, if desired.

My variations to the recipe:
I used regular pork sausage, semi dry-mild, I only used 1(15 oz.) can of”f ire roasted tomatoes, use both cans if you want it soupier. I did not use any onion or garlic and didn’t chop up my zucchini small, I used the small cheese filled tortellini pasta, but any pasta should be fine.
