INGREDIENTS
2 cups of your favorite chili
1 smoked sausage link
2 eggs
1 cup of grated colby jack cheese
1 sliced Jalapeño
1/4 chopped chives
Toasted sourdough bread for dipping
Step 1
Slice a smoked sausage link on an angle and pan fry it on both sides for about 3 minutes or until lightly browned. Take it out and set it aside.
Step 2
Add the chili to a medium high skillet and cook for a few minutes or just until the chili is warmed through.
Step 3
Add the cooked sausage link to the perimeter and mix in 1 sliced jalapeños
Step 4
After a few minutes, place 2 eggs into the center of the chili and cover it for 3-5 minutes or just until the eggs have set.
Step 5
Sprinkle on some cheese, followed by the chopped chives. Hit it with some fresh cracked black pepper and enjoy.
