Tomato Bulgur Pilaf
Ingredients
* 3 tablespoons olive oil
* 1 medium onion, diced
* 1 green chili pepper, deseeded & diced
* 6 garlic cloves, minced
* 1 tablespoon tomato paste (or pepper paste)
* 2 cups coarse bulgur
* 1 cup canned crushed tomatoes (or sub fresh)
* 3 cups hot water
* 1 teaspoon salt
* optional: Aleppo pepper flakes for more spice
Instructions
1. In a large pan on medium-high heat, season and sauté onions in olive oil until translucent, about 5-7 minutes.
2. Add in diced chili and garlic, sauté for another minute, then mix in the tomato paste.
3. Add the bulgur and tomatoes then sauté for a few minutes, stirring continuously.
4. Pour in the hot water, season with more salt and give it a taste. Add more salt if needed.
5. Bring the pilaf to a boil, give it one last stir, then turn down the heat to let simmer with the lid on for 15-20 minutes.
6. When the pilaf is cooked (it should still have a pleasant bite to it), take the pot off the stove and put a paper towel or dishcloth on top. Put the lid back on and let rest for 10 minutes. Enjoy as a side dish, or mix in cooked beans to make it a complete meal!
