Chipotle Grilled Fish
Ingredients
Boneless Fish Biscuit 500gms
Chipotle Sauce 2tbsp
Hot Sauce 1tbsp
Lemon Juice 2 tbsp
Oil 2-3 tbsp
Garlic Powder 1tsp
Finely Chopped Parsley 1tbsp
Salt ½ tsp
Black pepper ½ tsp
Paprika ½ tsp
Method
Marinate fish biscuits with all above ingredients.
Heat the grill pan and brush the olive oil.
grill the fish biscuits 2 minutes each side.
Topped with green onion and black sesame seeds.

Marinara Chicken Roll Ups
Ingredients For Sauce:
Tomato Puree 150gms
Onion (chopped) 1
Garlic Cloves 2
Italian Seasoning 1tsp
Salt to taste
Black Pepper ½ tsp
Water 100ml
Method
Heat the olive oil over medium heat in a medium sauce pan.add the garlic and onion cook until just softened.
Just a minute or two.
Add the tomato puree,water Italian seasoning,salt,pepper and sugar to the pan.Bring a boil over medium heat,stirring occasionally.Reduce heat cover and simmer 2to3 minutes.
Ingredients For Chicken
Chicken Boneless (thigh) 900gms
Garlic Powder 1tsp
Marinara Sauce 1/2cup
Mozzarella Cheese 200gms
Cherry Tomatoes 100gms
Basil Leaves 8to10
Oil 2tbsp
Black Pepper (crushed) 4tbsp
Tomatoes (chopped) 2tbsp
Onion (chopped) 2tbsp
Cream Cheese 100gms
Heavy Cream 200gms
Capsicums as required
Italian Seasoning 1tsp
method
Heat pan add 1tbsp Olive oil
And saute onion bellpepper tomatoes and onion one to two minutes.
Pound each each chicken thigh cutlets.pound each cutlet between two sheets of plastic wrap ito 1/8″ thick cutlets.
Season both sides of chicken with garlic salt and black pepper.
Spoon and spread 1tbsp marinara in the center of each cutlettop with saute bellpepper onion and tomatoe and sprinkle with 2-3tbsp mozrella cheese.Roll the chicken up tightly and seal ends with a toothpick.
Heat a large skillet pan over medium heat with 1tbsp oil and 1tbsp butter.
Add chicken roll-ups and sear on both sides untill golden(2minutes per side or 4to5 minutes total in the stove)
Add heavy cream and cream cheese Italian seasoning sprinkle tops with remaining cheese ,cherry tomatoes and basil leaves.
Slow flame and cover the pan 8 to 10 minutes.
Served yummilicious chicken rollups with garlic bread.

Chilli Mojito
Ingredients:
Soda 500 ml
Lemon Juice 2tbsp
Lemon Wedges as required
Black Salt 1tsp
Green Chillies 1
Ice Cubes as required
Ingredients Green Syrup
Sugar 4tbsp
Water 5tbsp
Green Colour 1drop
Mint Leaves for garnishing
Method .
Take a small pan,cook sugar and water until sugar dissolves completely then add green food colour n cook until syrup became little thick. U can make this syrup in large quantity n store in fridge for chilli Mojito.
Now take big glass ,add green Syrup 1,1/2tbsp, black salt 1/2tsp, lemon juice 1tbsp,green chilli ,lemon wedges and ice cubes .u can also add mint leaves for refreshing taste.then pour chilled soda and mix well.serves immediately.
