Vegan Chili con Carne (30 min recipe)
-Ingredients:
2 cups minced soja meat or seitan
1 onion
2 garlic cloves
1 red chili
1 can Tomato sauce
2 cups vegetable broth (or 2 vegetable stock cubes with 2 cups water)
1 can of beans
Salt to taste
1 tsp Oregano
1 tsp Coriander
1 tsp Cumin
½ cup corn (optional)
In a saucepan, sauté the onion, chili and garlic. Add the tomato sauce and soy meat. Stir well and cook for 5 minutes.
Then add the vegetable broth along with the beans and the other spices and stir well. Let it cook for about 20-2 minutes over medium heat and that’s it!
