Crock Pot Chili with Chuck Roast (instead of the traditional ground beef) – I wish you could smell my house!! Recipe below!!
Youāll need:
1 yellow onion, chopped
1 red bell pepper, chopped
1 can of diced jalapeƱo (you can also use fresh)
1 tsp each, salt and pepper
3 lb boneless Chuck roast, cubed
28oz can crushed tomatoes
14.5 oz can, diced tomatoes + juice
1 can black beans, drained and rinsed
1 C beef broth
2 TBSP tomato paste
Homemade Chili seasoning (see recipe below!!)
1) SautƩ onion, bell pepper and jalapeƱo for 4-5 minutes and season with salt and pepper.
2) While veggies are sautƩing, cube your boneless Chuck roast and add to your crock pot.
3) Then Add in veggies, crushed tomatoes, diced tomatoes, tomato paste, black beans and beef broth.
4) Sprinkle in chili seasoning and combine all ingredients well.
5) Cook on LOW for 8-9 hours (until beef is easily shreddable)
6) You can shred beef in the crock pot or remove, shred with two forks and place it back in. Continue to cook for an additional 10-15 minutes after shredding.
7) Plate & add your favorite toppings! I used tortilla chips, shredded sharp cheddar, sour cream and green onion šš¼ enjoy!
Homemade Chili Seasoning: Mix all together & use it all for this recipe!! It may seem like a lot but trust meā¦itāll add the best flavor!
1/4 C ancho chili seasoning
1 TBSP garlic powder
1 TBSP dry minced onion (or onion powder)
2 TBSP light brown sugar
1.5 tsp cumin
1/2 tsp allspice
2 tsp parsley
2 tsp oregano
1 tsp salt and black pepper
