Vegetarian Chili

1 cup diced yellow onion
1 cup diced red bell pepper
1 cup chopped carrot
1 cup chopped celery
1 (15-oz) can no-sugar added tomato sauce
1 (15-oz) can diced fire-roasted tomatoes
1 (15-oz) can black beans, drained and rinsed
1 (15-oz) can kidney beans, drained and rinsed
1 (15-oz) can pinto beans, drained and rinsed
2 tsp kosher salt, divided
1 tsp granulated garlic powder
1 tsp ground cumin
1 T mild chili powder
1 tsp smoked paprika
1 tbsp fresh lime juice
2 tbsp hot sauce (optional)

I top with diced avocado 🥑
