Sweet Potato Chili 🌶 – Lose Weight with Meal Prep ❌ THICC BOI❌

Hey #racefam – got some positive anecdotal response to the meal prep videos and I have to eat anyway – so here is a super easy Sweet Potato Chili recipe that will make multiple meal preps. So easy and packed with flavor and you can even get a workout in while you’re cooking! In the video I tied a few things, but cleaned up the recipe, so be sure to follow the recipe more than the video – even though you can’t screw it up. Sweet potato chili is very forgiving. Fire roasted tomatoes, roasted sweet potatoes, cinnamon and smoked paprika really layer on the flavor in this dish. I mention it a few times in the recipe video, but you can absolutely skip the Ground Beef in here and make it vegan by just switching out that 1 thing – everything else is super clean. You could add another onion and green pepper or celery to give it even more veggie power!

Recipe:

– Extra Virgin Olive Oil (EVOO) – 2 TBS
– 1 lb Ground Beef
– 1 Large yellow onion – diced
– 3 cloves of Garlic – finely diced
– 1 Bell Pepper any type – diced
– 2 diced Sweet Potatos
– 1 can Black Beans (drained)
– 2 cans of fire roasted diced tomato
– 1 small can of corn (optional)
– 1/2 cup of water
– 1 TBS of Chili Powder
– 1 TSB Paprika (smoked if you have it)
– 1 tsb Cumin
– 1 tsb Oregano
– 1 tsb Cinnamon
– Salt & Pepper to taste

Tools: Dutch Oven, Baking Sheet

Preheat Oven to 250f

1. Mix Sweet Potato: 1-2 TBS EVOO, Salt/Pepper, mix by hand and lay flat on baking sheet for 10 minutes, (meanwhile move to steps 2-5) then flip potatoes and continue another 10 minutes
2. Bring Dutch oven to medium heat on stovetop – add beef to dutch oven, cook till browned and drain excess fat
3. Add Green Pepper, Onion, Garlic, corn, beans, tomatoes
4. Add Chili Powder, Paprika, Cumin, Oregano, Cinnamon, Salt/Pepper
5. Add 1/2 cup of water
6. Simmer for 10 minutes on stove top, bring to boil briefly
7. Transfer to dutch oven to oven at 225f cover & simmer for 1-2 hours
8. Serve Chili in bowl with Sweet potato on top (Salt/Pepper & garnish to taste)
