LETS MAKE THAI BASIL CHILI CHICKEN FOR LUNCH
I used;
5 lbs chicken drumsticks
(about 13 pieces)
8 Tbsp cooking oil
2 cups thai basil
3 medium onions
8 cloves garlic
6-12 dried red chilies
To make sauce
2/3 oyster sauce
2 tsp fish sauce
4 tsp soy sauce
4 tsp sugar
2 Tbsp cornstarch
1 Tbsp Thai chili sauce
1. sear chicken on both sides in pan with oil and set aside (Turn pan to low heat at this point)
2. pour into pan you onions, garlic & dried chilies
3. Add chicken after onion caramelizes
4. pour sauce mix over chicken and stir
5. add basil leaves, stir and turn off heat
serve over white rice
