MATHAR

Ingredients

Wheat flour 750 gm
Edible gum 200 gm
Jaggery 2 cups
Caster sugar ½ cupClarified butter 2 ½ cup
Grated coconut 1 cup
Sliced almonds ½ cup
Sliced pistachio ½ cup
Cardamom powder 1 ½ tsp

METHOD

Heat half quantity of clarified butter and fry gum little by little and remove. In the remaining ghee, add Jaggery and wheat flour, cook for at least 15 mins on low flame, then add in the remaining ingredients, mix well and save in a jar.

KAFTA CHILI FRY

Ingredients for Kafta

Chicken mince ½ kg
Roasted gram flour 5 tbsp
Roasted poppy seeds grounded 1 ½ tbsp
Cashew nuts roasted & grounded 2 tbsp
Cream 2 tbsp
Mint leaves 8 chopped
Coriander leaves ½ cup finely chopped
Green chilies 4 chopped
Ginger garlic 1 tbsp heaped
Onion 1 cut into pcs
Roasted cumin 1 tsp
Salt 1 tsp
Coriander powder 1 tsp
Chili powder 1 tsp
Allspice ½ tsp
Black pepper ½ tsp
Oil 2 tbsp

Ingredients to Fry

Onion 1 large sliced
Green chilies cut lengthwise 6 large
Button red chilies 6
Curry leaves 15
Capsicum ½ cut into strips
Chopped coriander leaves 4 tbsp
Peanuts handful
Spice mix to season
Zatar 1 tbsp
Sumac 1 tsp
Chicken powder ½ tsp
Salt ¼ tsp
Chili powder ¼ tsp
Black pepper powder ¼ tsp

METHOD

Put all the ingredients for Kafta in chopper and chopped till smooth. Grease hands, shape into balls, fry prepared kaftas in oil for 2-3 mins, then cool on a tray (you can freeze these also).

TO MAKE KAFTA CHILI FRY

Heat oil in a wok and deep fry onion, red chili and green chilies, once the onions get to a light pink color, add in kaftas and fry them till edges turn crisp and golden, add in curry leaves, capsicum, coriander leaves, drain them all out of the oil into a bowl, sprinkle the spice mix on the fried kaftas and serve as side dish.
