The Tunacado has been taking TikTok by storm, but it’s time to switch up the game with an Indian twist. Say hello to the Chili Cheese Tuna Melt.
INGREDIENTS
For the tuna salad
1 cup mayonnaise
Salt to taste
4, 184 g tins of tuna drained
⅓ cup finely chopped red onion
1 jalapeno, seeded and finely chopped
For the coriander chutney
1 bunch of coriander, coarsely chopped
6 thai green chilis
½ sweet white onion, roughly chopped
Juice of 1 lemon
Salt to taste
To assemble
Sliced bread (I used calabrese, but feel free to use your favourite)
Pickled Hot Peppers
Sliced Swiss Cheese
METHOD
To a bowl add mayonnaise, lemon juice, and salt to taste. Mix. Then add tuna, and mash/mix until creamy and fairly smooth. Fold in red onion, and jalapeno until well distributed.
Add ingredients for chutney to a blender, and blend until smooth.
To assemble, spread 1-2 tbsp of chutney on one side of bread and top with swiss cheese. Layer tuna salad on top, followed by some pickled hot peppers and more swiss cheese.
Toast in a dry pan on medium heat, or a panini press until crisp and golden on both sides, and gooey in the middle. Enjoy!
