Tamil food is Rajiv’s favorite, and he cooks traditional dishes regularly. One of the staple ingredients of Tamil cuisine is chili powder, a mix of spices and chilies that are roasted and ground into a powder.
Rajiv will be sharing recipes for all kinds of dishes that require this chili powder which can easily be made at home. It is distinctly Sri Lankan, used predominantly by Tamils living in the north part of the country (Jaffna).
Here are the ingredients:
100g dried red chilies
100g coriander seeds
45g fennel seeds
45g cumin
5g fenugreek seeds
5g black peppercorns
5g turmeric powder
10 curry leaves
2” of rampe (pandan leaves) cut into 1/2” pieces
