Ingredients
* 1 cup dry red kidney beans
* 1 cup dry northern beans
* 4 cups water
* 1 pound lean ground beef
* 1 tablespoon vegetable oil
* 1 onion plus half of another onion, chopped and divided
* 1 bell pepper, chopped
* 3 garlic cloves, chopped
* 2.5 Tbsp chili powder
* 1 Tbsp ground cumin
* 1/2 Tsp paprika
* 6 oz can of tomato paste
* 14.5 oz can of diced tomatoes
* 10 oz can of diced tomatoes with green chilies
* 5 cups water
* 2 Tbsp soy sauce
* 1 Tbsp salt
* 1 Tsp black pepper
* 1 avocado, sliced
* Cilantro, chopped
Directions
* Put beans into a pressure cooker with 4 cups of water. Cook for 10 minutes on high pressure then release steam. Drain beans and set aside.
* Set pressure cooker to sauté mode and add a little olive oil to the bottle before cooking ground beef. Remove cooked ground beef using a slotted spoon and placing beef into a separate bowl for later.
* Add to the pot to sauté the oil, 1 chopped onion, and bell pepper. Cook until the onions are t then add in the garlic. Season with salt & pepper.
* Add in the seasonings and tomato paste. Cook for 3 minutes.
* Pour in both cans of tomatoes along with 5 cups of water, cooked ground beef, soy sauce, cooked beans, and salt & pepper. Pressure cook on high for 30 minutes then release steam.
* Serve with chopped onion, chopped cilantro, cheese, and sour cream.
