Today I am making my easy chili recipe and Chicken and Dumplings! I’ve made these recipes for years and they are super easy!
Chili recipe:
1-pound ground beef
1 pepper
1 onion
14 oz chopped tomatoes
14 oz tomato sauce
2 14 oz cans great northern beans
Use my chili seasoning or a packet of store-bought chili seasoning
My chili seasoning recipe:
4 tsp chili powder
1 tbs crushed red pepper flakes
1 tbs dried minced onion
1 tbs dried minced garlic
2 tsp white sugar
2 tsp ground cumin
1 tsp salt
1 tsp dried basil
¼ tsp ground black pepper
Mix all ingredients together and store in an airtight container
Brown beef, add pepper and onion and cook down, add tomatoes and sauce, beans and seasoning, cook on medium heat for about an hour. Serve with your favorite sides, enjoy!
Super easy Chicken and Dumplings recipe:
1 32 box carton reduced sodium chicken broth (about 4 cups)
3 cups cooked chicken, chopped or shredded
1 can condensed cream of chicken soup
¼ tsp poultry seasoning
1 16.3 oz Home style refrigerated buttermilk biscuits (8 biscuits)
2 med carrots, chopped (1 cup)
3 celery ribs, chopped
2 tbs flour
2 tbs water
In a Dutch oven or saucepan, heat broth, chicken soup, poultry seasoning, cooked chicken, carrots and celery. Bring to a boil reduce heat to low, cover and simmer for 5 minutes stirring occasionally. Add flour and water mixture, stir into hot mixture.
On a lightly floured surface, roll or pat each biscuit to 1/8 inch thickness, cut into ½ inch wide strips.
Drop strips, one at a time into boiling chicken mixture, reduce heat to low. Cover: simmer for 15 to 20 minutes and gently stir around the edges to prevent dumplings from sticking. Serve with favorite sides. Enjoy!
