Chilli con carne is a favourite in my house. We always make a massive batch to freeze and enjoy on a rainy day or on a day where we don’t want to cook. Great with rice, chips, or on its own with some sour cream and spring onions.
Ingredients:
– 1 kg mince meat
– 1 tin kidney beans
– 4 tinned tomatoes
– 3 to 4 cloves garlic, minces
– 1 medium onion, chopped
– 2.5 tsp paprika
– 1.5 tsp cumin
– 2.5 heaped tsp salt
– 1 tsp black pepper
– 12 to 14 sliced jalapeños
– 5 to 6 tbsp olive oil
– 3 to 4 tbsp jalapeno juice
– 0.25 cup spring onion
– 0.125 cup coriander, chopped
