What good is Sunday football without an Epic Sunday Football Chili Recipe?!?! Regester for Dinner is at it again, with another killer dinner recipe. Impress your friends and loved ones with this Epic Chili recipe! You won’t be disappointed 🙂 I love to garnish my chili with cheddar cheese, sour cream, and chopped red onions. Epic Sunday Football Chili:
Ingredients:

* 3 lbs Ground Beef
* 1 Medium Red Onion, optional
* 2 Large Yellow Onion, chopped
* 2-3 Green Bell Peppers, chopped
* 2-3 Jalapeños, chopped
* 3 Garlic Cloves, minced
* 3 Chipotle Peppers
* 1 15oz can Black Beans
* 1 15oz can Pinto Beans
* 2-3 12oz Beers (Preferably Lagers)
* 1 28oz Can Chopped Tomatoes
* 3 tbsp Chili Powder
* 1 tbsp Cumin
* 2 Bay Leaves, dried
* 1/4 cup Ketchup
* 2 tbsp Vinegar
* Tortilla Chips
* Salt & Pepper, to taste
* Shredded Cheddar Cheese, optional
* Sour Cream, optional

Equipment:

* Knife
* Cutting Board
* Stirring Spoon
* Tasting Spoon
* Large Pot w/ Lid
* Strainer
* Measuring Cup and Spoons
* Can Opener
* Stove

Directions:

Heat pot on medium hight heat. Brown ground beef in large pot. Once beef is browned, strain out all of the liquid. Return beef back to pot. Add the chopped yellow onions, peppers, jalapeños, garlic and sauté for 5 minutes until veggies are soft. Add your chili powder, cumin, and sauté for an additional 3 minutes. Time for the liquid. Add your 28oz can of chopped tomatoes, chipotle peppers, and BEER!!! The liquid should cover the meat.. if not.. add more beer! Add 2 bay leaves. Cover your pot with a lid and simmer for 2 hours on low heat, stirring occasionally. Add beans, ketchup, vinegar, salt & pepper to taste. Cook for another 15 minutes. If chili is thin, stir in ground tortilla chips and simmer for 5 more minutes.

Garnish w/ cheddar cheese, sour cream, chopped red onion and serve! 🙂
