Crockpot Ranch Pork Chops and Potatoes
1:15 –
I did not use a half a cup of oil for this as that seemed excessive. I used a 1/4 of a cup and only used that over the potatoes. Since i did that i mixed 2 tbsp of ranch seasoning and a tsp of the vinegar in with the potatoes. On top of the pork chops i put another tsp of vinegar and the other 2 tbsps of ranch. I cooked on low for about 6 hours but really could have been done in 5.
Sour Cream Green Chile Rice

This was the family winner of the week. I think it could have used a little salt, pepper, and maybe garlic powder but my family thought it was amazing as is.
Chili Lime Baked Tilapia With Avocado Crema

I doubled the recipe for the fish and the avocado crema. The fish is SPICY. If your family does not like spice i would omit the cayenne pepper. I will be putting in a much smaller amount next time i make this. The crema is designed to balance out the spiciness but it was still really hot. Honestly it could stay this spicy if you shredded the fish, put in tacos, and slathered that crema sauce on the taco. Also I cooked the fish for 15 minutes, instead of 12.
