My mother made pepper sauce every year, and we had it with collard greens and turnip greens just as you said, and of course a big slice of cornbread. MMM mmm! You done went and got me hungry! I may try my hand a growing these tabasco peppers. I really miss the homemade pepper sauce 🙂
A wonderful recipe. I always do the preservation of vegetables. Seasoning for some reason did not. Need to try.

Do you have to keep it refrigerated?
I live in SC and hot sauce is pretty much a "staple" here. I do some canning and I was wondering if I made up a dozen bottles of this and stored them….would they "go bad" over the course of a year? I do garlic pickles with garlic and a cayenne….and they are DELICIOUS….but that is "canning", can't see only doing 1 or 2 bottles, so a dozen seems like it would last…but for how long?
Add some black pepper corns and if you have some shallots cut those up and add them too.
I've made several bottles this summer. I use cayenne peppers and I've also placed a single habanero pepper among the cayenne peppers in a couple of batches just to try something different.

I have 2 Tabasco plants and the peppers are just starting to ripen. I will make mostly hot pepper fermented sauce but will probably make myself one of these. I've been wondering about this. I live in Tennessee (from Michigan) and people I work with know I make sauce and have been asking about this.
Is this a good replacement for hot sauce or does this have a completely different flavor?

I love Florida Broad Leif Mustard with some turnip greens mixed in. I've got a jar of homemade Pepper Sauce waiting, I need to make more. Hot Vinegar is good on everything.

I grew up in Maine cooking collards mustard greens turnip greens and dandelion greens. The South doesn't have the corner on eating greens! 🙂

Yes ma’am, this is the absolute perfect way to make a Louisiana style hot sauce. Split the peppers though for better taste and heat.
