The full recipe is below

8 large prawns, deveined with shell and head retained
1 tbs whole black peppercorns
6g dried shrimp, rehydrated and chopped
1 shallot, chopped finely
1 cloves garlic, chopped
1 birdseye chilli, chopped
15 curry leaves
1 tsp soy sauce
2 tsp dark soy sauce
2 tsp oyster sauce
⅛ tsp salt
1½ tsp sugar
15g butter
Vegetable oil
Grind black peppercorns into coarse pieces.
Toast on low heat for 2-3 mins until fragrant.
Set aside.
Lightly season prawns with salt.
Fry in vegetable oil on medium heat for 45 secs on each side.
Fry in batches to ensure oil temperature is maintained.
Once fried, drain and set aside.
Retain a small of the oil and fry dried shrimp in it on medium heat for 1-2 mins until golden brown.
Remove and set aside.
In the remaining oil, melt butter.
Add shallot and fry for 3-4 mins until it turns light brown.
Add garlic, chilli, and curry leaves and fry for 1 min.
Add toast black pepper prepared earlier and fry for 1-2 mina until peppery aroma is released.
Add soy sauce, dark soy sauce, oyster sauce, salt, sugar, and dried shrimp prepared earlier and mix until well combined.
Add fried prawns and mix until evenly coated.
Serve immediately.
