Turkey Chili and Spicy Cowboy Chili
Ingredients (for main chili):
1lb Ground Turkey
½ Yellow Onion
1 Yellow Bell Pepper
2-10 Cloves of Garlic
1-2 Cups of Chicken Broth
1-2 Cans of Diced Tomatoes (I used cans of tomatoes with green chilis)
1-2 Cans of Beans (I used white beans and red kidney beans)
2 Tbsp Chili Powder
1 Tsp Cumin
1 Tsp Oregano
1-2 Bay Leaves
Black Pepper (as desired)
Additional ingredients for a spicer (cowboy) chili:
Hot Smoked Sausage
2 Red Chili Peppers
1-2 Tsp Crushed Red Pepper
1 Tsp Cayenne Pepper
Shredded Cheese (as desired)
Directions:
Dice Yellow pepper and onion, mince garlic and red chili peppers.
Dice sausage for later use.
In a large pot; brown ground turkey, add pepper, and drain if desired.
Add onions, garlic, yellow peppers, chili powder, cumin, oregano, chicken broth, tomatoes, bay leaves, and simmer for 1 hour to 1.5 hours stirring occasionally.
Add beans into chili approximately ½ way through for a firmer texture of beans.

For Spicy Chili:
Cook chilis and sausage in oil or butter to bring out the flavor and heat.
Add into a separate pot with as much of the main chili as you want.
Add crushed red pepper, cayenne pepper, and cheese as desired.
Both chilis are excellent and pair wonderfully with a delicious moonshine or beer. If you prefer a chunkier or less liquidy chili, you can slowly add the chicken broth or cook it long enough to burn off. The longer you cook it, the better it tastes. It is exceptionally delicious the next day as leftovers.
