    That’s esquites where I’m from, elote is corn on the cob.

    I don’t see mayonnaise. It’s optional but most of the time it’s mayonnaise or sour cream.

    Looks good! The best esquites I’ve tried had bone marrow in them. Supper yummy! There’s a place here in Queretaro that serves them with dry ramen or doritos. Authentic is meaningless in a country as diverse as Mexico, have fun with fusions!

    Personally, I have never seen esquites with lime unless the corn is grilled. Also I’ve normally see mayo being used instead of crema

    I kinda like them more when you cook the corn first before removing the kernels, keep more flavor.
