METHI MUTHIYA RECIPE – HOW TO MAKE GUJARATI MUTHIA – GUJARATI RECIPES

Ingredients

For methi muthia recipe:

• 2 ½ leaves Fenugreek leaves (Methi leaves) plucked, measured then washed
• ½ cup Whole wheat flour (Chapati atta)
• ½ cup Besan (gram flour)
• 1 Green chilies chopped finely
• 1 teaspoon Ginger paste or freshly grated or crushed
• 1 teaspoon Turmeric powder
• 1 teaspoon Red chili powder
• Salt to taste
• 1 teaspoons jaggery powder
• 1 teaspoon Lemon juice
• 3 tablespoons Oil
• 2-3 tablespoons Water or more or less
For tempering steamed version:
• 1 tablespoon Oil
• 1 teaspoon Mustard seeds
• 1 teaspoon Sesame seeds
• a pinch Hing (Asafoetida)

Instructions

Preparation:
1. First wash the methi leaves very well.
2. I have kept them in cold water for 15 minutes, so all the dirt will settle down at the bottom, then I took leaves, squeeze extra water gently using hand.
3. Chop them and keep it aside.
Making methi muthia recipe:

1. Take atta, besan, salt, sugar, turmeric, chili powder with ginger paste and green chilies in a bowl. Mix it.
2. Add 3 tablespoons of oil. Rub it into flour with fingertips.
3. Then add washed fenugreek leaves and lemon juice.
4. Again mix it with hands.
5. Start making dough by adding little water at a time. Sometimes you might not need any water to make dough.
Make Steamed Muthia:

1. Take 1-2 inches of water into the steamer and let the water come to a simmer. Meanwhile grease the tray and also your hands. Make muthia as detailed in the video
2. Arrange them on greased tray.
3. Steam it for 17-20 minutes. Check by inserting a knife or toothpick, if it comes out clean then it is done.
4. Remove it to another plate and let it cool for 5 minutes. Then make muthiya as shown in video.
5. Heat the oil for tempering. Once hot add mustard seeds, let them pop.
6. Then add sesame seeds, let them pop, add hing.
7. Immediately muthia. And sauté for few minutes and let it brown a little bit.

Make Fried Muthia:

1. Grease your hand with little oil and make small sized muthias like this.
2. Heat the oil to deep or shallow fry and meanwhile it is getting ready, shape all the muthias same way.
3. Now oil is hot, fry them.
4. Keep moving them around for even browning. Fry till they are crisp and golden brown from all sides.
5. Then drain the extra oil using slotted spatula.
6. Remove it to the paper towel lined plate and serve hot.
