This recipe is written for 8 chicken thighs, because I think that’s the right amount for 4 people, but it’s easy to scale down. Regardless of how many thighs you use, choose a skillet that holds them snugly, which is the best way to render the skin without burning. I’d make the full amount of dressing and use the extra in the next few days, itās so good.

Made this one last nightā¦turned out great, Carlaās comment about the perfect bite being a bit of everything was spot on. The chicken was great, but the croutons were a little plain and the salad a little tart, but everything together was amazing. One piece of advice would be to make sure to not overcook the croutons, the ones that were crispy on the outside but still soft in the middle were perfection.
