I’m Mexican and can vouch for this , with the only exception that we don’t put lettuce in the bread/bolillo only the scramble egg. Then it is a truly Mexican breakfast.

The bread to egg ratio is NOT for the carb fearing mongers of the new world disorder!
For example, wife numero dos would see this bread beast and would scream as if she saw a big ceiling spider (which as we all know is the creepiest of the creepy, cuz you know they’ve been there…awhile…watching…you…be..you).
