Ingredients
500g lean minced lamb
2 medium onions
2 tsp garlic paste
1 tsp ginger paste
2 bullet chillies/green chillies
1/2 tin chopped tomatoes (or 4 fresh tomatoes)
1 cup veg oil
2 tsp salt
1 heaped tsp coriander powder
1 heaped tsp cumin powder
1 tsp red chilli powder
1/4 tsp turmeric powder
Method
•Heat oil in your pan (avoid non stick where possible you need the browning).
• Add onions and fry until edges are brown.
• Add 2tsp garlic paste and 1tsp ginger paste and stir.
• Add half a can of chopped tomatoes (or 4 fresh tomatoes) and stir into onions.
• Add the minced meat and fry for 3-4 mins on a medium high heat.
• Once browned-add all the spices.
• Simmer until the meat is cooked. This is roughly 20 mins for lamb and slightly longer for beef and mutton.
• Whilst the meat simmers on low heat you will need to stir the mince a few times to ensure it doesn’t burn. This browning (bhun) process will also avoid any meaty smells.
• Add peppers, chillies and half a cup of water. The water is added here as it brings the browning and meat together into a rich curry.
• Put the lid on and simmer on a low heat for 5 mins.
• Give it a final mix and garnish with coriander.
