Black Pepper Chicken Chop Recipe | What makes a great black pepper chicken chop?



Go to any Western food stall, in any coffee shop or hawker centre and you will find Black Pepper Chicken Chop on the menu.

But not all stalls make good black pepper chicken chop. There should be some amount of char on the surface of the chicken for that smoky flavour. And the black pepper sauce should give you a healthy dose of that peppery punch.

This black pepper chicken chop recipe will do just that. But, of course, you can adjust the level of heat to your preference.

Ingredients:
Chicken chop:
2 boneless chicken thighs (about 200g each)
2 tsp oyster sauce
2 tsp soy sauce
2 tsp Chinese cooking wine
1 tsp dark soy sauce
1/2 tsp salt
1/2 tsp sugar
2 tsp corn starch

Black pepper sauce:
3 cloves Garlic, finely chopped
1 Tbsp onion, finely chopped
1/2 – 1 1/2 tsp Black pepper, coarsely ground
200ml Water
3 Tbsp Soy sauce
2 Tbsp Worcestershire sauce
1/2 tsp sugar
1 Tbsp ketchup
Corn starch slurry (1 Tbsp corn starch + 3 Tbsp water)
