🍽️ RECIPE- RED PEPPER HUMOUS 🍽️
1 large red bell pepper
1 can chickpeas (garbanzo beans), drained and rinsed
1/4 cup tahini
2 cloves garlic, minced
2.5 tablespoons lemon juice
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
1. Preheat your oven to 200°C. Place the red bell pepper on a baking sheet and roast it for about 25-30 minutes until the skin is charred and blistered. Remove from the oven and let it cool.
2. Once the roasted pepper is cool enough to handle, peel off the charred skin, remove the seeds, and roughly chop the flesh.
3. In a food processor or blender, combine the roasted red pepper, chickpeas, tahini, minced garlic, lemon juice, olive oil, cumin, paprika, salt, and pepper.
4. Blend the mixture until smooth and creamy, scraping down the sides as needed. If the hummus is too thick, you can add a little water or more olive oil to achieve your desired consistency.
5. Taste and adjust the seasonings if needed.
6. Garnish with some chopped fresh herbs or a sprinkle of paprika
