
This was my first time ever grilling a skirt steak. I let it marinate for 4 hours
Recipe for marinade: 2 guajillo chiles, 2 Pasilla’s, 3 anchos. Soften for 20 min in water (seeded and de stemmed)
Add chilis, 3 cloves garlic, 3 tablespoons olive oil, a teaspoon of pepper and cumin, 2 teaspoons salt, 1 tablespoon marjoram. Blend until smooth add water in small increments to adjust consistency
Covered steak with marinade in ziploc, fridge for 4 hours. Seared on a roaring hot charcoal grill for ~2 min each side

Looks like you sliced with the grain instead of against which will result in more tender meat for next time.
