Basic Pickling Brine Recipe:
3 cups Vinegar
1 cup water
3/4 Tablespoon Pickling Salt
1/2 Tablespoon Sugar
Heat everything to a boil then allow to simmer until ready to pour. This recipe can be multiplied or divided to fit your situation.
This brine can be used to preserve/pickle other vegetables as well.
Always sanitize your glass jars, lids and utensils.

Great simple recipe and gorgeous peppers! I used to make these when I lived in New Mexico (arguably the hot pepper capital of the world!), for some enthusiastic recipients. If you process the jars in a water bath canner (see the Ball Blue Book for times-per-altitude) they will keep longer and make delightful red-and-green Christmas presents. TFS!
