Serving Size = 4 Foodies
Ingredients:
– 2 lbs shrimp
– 1.5 cups cornstarch
– 6 cloves garlic
– 2 jalapenos
– 2 green onions
– neutral-flavored frying oil (e.g. canola or peanut oil)
– 2 tbsp butter
– 2 tbsp salt
– 2 tbsp black pepper
Wet Batter Ingredient:
– 1.5 cup all purpose flour
– 2 tsp salt
– 2 tsp black pepper
– 1 ¼ cup water give or take
Instructions:
1) Rinse, clean and devein your shrimp. We keep the shells on.
2) Place shrimp in a mixing bowl. Add cornstarch and mix so that all shrimp are evenly coated.
3) Mince your garlic.
4) Slice your jalapeños.
5) Slice your green onions.
6) Deep fry your shrimp. Remove and set aside.
7) Stir-fry your jalapeños, garlic and green onions until slightly brown. Optionally add some butter for some extra depth of flavor.
8) Add you cooked shrimp.
9) Season with salt and pepper.
10) Toss to mix.

I hate how people cook them like this. you don't eat them shell and legs head and poop shoot. come on. so you put all that effort in. and then you have to deshell em. and all the flavour is gone as it is on the shells. etc

This was going SO WELL! …until you got to the 'salt & pepper' seasoning.
Fresh ground black and WHITE pepper corns are required for this recipe. And no Sichuan pepper? That's ESSENTIAL to the dish because it adds that 'mouth tingle' people have come to love (and expect!) You've got all the tools to do it right, why would you skimp on the peppers?
