Strawberry Carolina Reaper Jam Recipe | Reaper Jelly | Hot Pepper Jam / Pepper Jelly



ScorchBerry Jam!

4 Pounds Fresh Strawberries
4 Carolina Reapers (Less if you want less heat)
5 Cups Sugar
1/4 Cup Lemon Juice
1 Box Powder Pectin (47grams)

1. Sterilize Jars in boiling water and keep hot until ready to fill.

2 .Mash Strawberries to desired consistency and add lemon juice and pectin. Mix well.

3. Carefully deseed peppers (USE GLOVES) and finely chop. Add to mix and mix well.

4. Bring mixture to a hard boil. Add sugar all at once.

5. Stir well and bring back to a hard boil for 2 minutes.

6. Fill Hot jars. Clean rims, place lids and rings on finger tight.

7. Return to water bath and boil for 10 minutes.

8. Remove from heat and let sit 10 minutes.

9. Place jars on cooling rack or towel and let rest for 12 hours. Listen for the click!

  1. We use this recipe with jalapeños, really good. Use very similar recipe for peach habo jam and peach reaper jam; just swap the fruits. I grow reapers if you ever need any. Actually have a lot right now.
