probably a smoked marlin gobernador but tacos arabes are underrated
Lengua for the win
Suadero, but lengua is a close second.
Carnitas are the best.
However, pastor, lengua, chicharon, and pescado tacos can all be amazing too!

Al Pastor, lengua, and specifically the fish tacos from my favorite place in Ensenada.
Between these 2 options, it’s lengua for me. But I love me a nice combo plate of tacos. My go-to’s are 2 asada, 2 cabeza, 2 de buche. If available I trade the buche tacos for chorizo, or say eff it and add the 7th taco to the plate. To verify, I do this with the mini street tacos not the regular sized tortilla ones. Mmmmmmm…
My personal favorite is al pastor followed by carnitas.

Al pastor con chile verde.
Suadero, chorizo, barbacoa, al pastor, pescado, and asada.

In my case I would say pastor.

Tripa
I love carne asada but I feel like there are many other great tacos I just haven’t given a chance. I like chorizo too, but the first time I had a real taco from a truck in a gas station in California I’ve been hooked on street tacos and trying to perfect mine.
Gobernador
In order: Al pastor, suadero, gobernador, lengua, chicharron.
I also have a real soft spot for the tacos de canasta de papas. Something about the squishy potatoes and the way they soak up the salsa.
Beef tongue,Pastor and Shrimp are on the top
followed by Birria ,Carnitas and Asada

Barbacoa
Definitely not our local place, which specializes in … “european tacos”, which has fries and other burger-like ingredients in it. I’m sure it tastes great, but that should have been the red flag, but I saw traditional taco on the menu. What we got was … wrong.
Cabbage and a bit of beef with parsley and mayo, topped with more cabbage. I don’t know if I have ever been more revolted.
Tripas doradas. Or cabeza. Or borrego. Lol
Lengua is top tier but I’m partial to suadero, assuming it’s quality
