Keto Stuffed Bell Peppers | Easy Recipe! | Riced Cauliflower and Ground Beef



This would be the very first keto friendly recipe I’ve ever made at home. It tasted so good! I’m definitely making this again. It was easy to assemble and the clean up afterwards wasn’t too bad either. I had a feeling I would like this recipe since I am a fan of bell peppers, cheese and a good hearty sauce. I did make this with ground beef, but I assume that could be swapped out for grilled chicken too and the dish would still be keto friendly.

Ingredients:
3 green bell peppers
1/2 cup yellow onions, diced
3 tsp garlic, minced
1 lb ground beef
2 cups riced cauliflower
1 1/4 cup marinara sauce, (sugar free)
1 tsp dried basil
1/2 tsp garlic salt
1/4 tsp black pepper
1/2 cup shredded cheese, 3 blend
butter

Directions:
Wash, dry and cut the bell peppers in half. Take out the seeds and membrane, discard. Place the peppers in a baking dish, cut side up and season with salt and pepper.

Cook ground beef until done, drain off the grease and set off to the side. To the same pan, add in a pad of butter and saute the onion, cauliflower and garlic until tender. About 4-5 minutes.

Add in the rest of the ingredients plus the cooked beef. Stir until heated through.

Spoon the meat and sauce mixture into each bell pepper. Sprinkle the top with a little cheese. Cover with foil and bake for 30 minutes in a 350 degree oven. Enjoy!

(Note: I like to be able to cut my bell peppers with a fork instead of a knife for this recipe, so I tack on an additional 15 minutes to the bake time.)

  2. If you like your peppers more tender you can steam them in the microwave in a shallow dish with a little bit of water. Place them open side down and microwave for 2 minutes.

  3. If you boil the peppers for 5 min before stuffing, they don’t take as long to bake and are more tender. I personally use red or orange peppers.

  4. Perfect recipe!!! Instead of ground beef we used Italian sausage we had in the freezer, added diced mushrooms to the stuffing, added 10 minutes to your cook time and they came out perfectly! We will definitely be having these again! Thank you!

  5. I boil the peppers to make them soft then you stuff and you only have to bake a few minutes to melt the cheese. So good with soft peppers!
